BIG NEWS!!!

I'm so humbled and excited to be sharing my recipes with you!

Scenes from the weekend
Friday was a great day since I only worked half a day.  The(amazing) company my sorority sister works for hosted a health and wellness fair for their employees. She invited me to have a booth and share my cooking skills and recipes.  I had so much fun and  it was great from networking perspective.  Here is my picture of my booth- its a little dark but you get the point

At the expo I was asked a few times about carbohydrates and if I am on a low-carb diet.  I try to follow a specific macronutrient plan based on my training needs and in general how my body feels.  Sometimes I want/need more carbohydrates.  I am not a doctor, dietitian or nutritionist so I cannot advise to your specific dietary needs.  Here is an useful article with lots of information and I hope it answers any questions you may have.

Saturday, was my sorority's 117th Founders' Day Celebration.  Once the rain stopped, the day was beautiful.  It was great to get together with 100 or so women all celebrating a special bond and love for an outstanding organization.


After the luncheon I hurried home to soak up the sun poolside.  Here is my beautiful view!

After laying out for a couple hours(of course I used sunscreen) it was time for dinner.  Since it's Saturday, it was "cheat day".  My cheat meal day usually involves pizza or Italian food.  My buddy and I grabbed some pizza from Pomodoro's.  Friends this place is SO good.  They even sell their dough- white, whole wheat and gluten-free!!! All are very good!  Trust me this is the crust you will be fighting over!
After dinner I wanted a glass of wine.  We opened this bottle.
Fancy Pants! Nothing fancy about this but the label.   I bought this to toast moving into my new condo.  I was a little disappointed! I doubt I will finish the bottle. But I hate wasting though! haha

Well it's time to get ready for church, then lunch and pedicures with my sweet friend Faith! I'm so excited for a girl's afternoon!  Yesterday was National Manicure & Pedicure Day.  We're celebrating a day late. haha

Thirsty Thursday!!!
Hey Friends! I hope you all had a good day.
Our server at work was down ALL day. So I didn't get nearly enough accomplished as I like.  Especially since I'm working half a day tomorrow.  Speaking of Friday- a HUGE thing is happening!!! It's been a long time coming! Lots of prayers and blessings were put into this project.   EEK I'm almost about to give it away.  Ok moving on . . . .
This morning I was in a pancake mood.  So protein blueberry pancakes hit the stop.  Not pictured- the giant cup of coffee that MUST accompany a pancake. Don't talk to me until I've had my coffee. #coffeeaddict #coffeesnob  And speaking of coffee I DID NOT go to Starbucks today! I know thats hard to believe- is the world ending- probably not.  Though I will be making my usual Friday morning stop at Starbucks.

I am participating in a friend's company's health and wellness expo tomorrow.  I wanted to show off my cooking skills.  I whipped up this delicious snack for attendees to sample
I have to warn you- these nuts are addicting! Like crack! If I knew what crack was like! haha 
Spicy Sweet Nuts
1 cup unsalted cashews
1 cup unsalted peanuts
1-1/2 Tbsp coconut oil, melted
2 Tbsp coconut sugar
1/4 c Local Honey
1 tsp cayenne pepper
1/2 tsp cinnamon
1/4 tsp sea salt
Preheat oven to 350 degrees.  Place parchment paper on a baking sheet.   Melt oil and whisk in sugar, honey, cayenne, cinnamon and salt in a small bowl.  Using a large bowl pour in nuts and stir to mix.  Then add liquid mixture.  Stir gently to mix thoroughly.  Place the nut mixture on baking sheet.  Bake in oven for 15-17 minutes, stir nuts at minute 8.  Watch carefully as the sugar can burn easily.  Remove and let cool completely.  The nuts will break apart easily.  Enjoy the crunch!!  Suggested serving size- 1/2oz.  But good luck keeping your hand off these!!

In the spirit of treats, I found myself strolling down the ice cream aisle in the grocery store this afternoon.  Holy spoons look what I found!!!!!
I am SO excited to try these two flavors!!! I talked about how much I love this ice cream and how healthy it in this post.

I don't know about you but I am looking forward to the weekend.  On Saturday I will be joining about 70 of my sorority sisters to celebrate our 117th Founder's Day.  It's nice to join women of all ages, from all over the state, in one location, for one reason.

Happy Earth Day!!!

Go Green- Eat Lean- Train Mean!!!

Do you all do something unique for Earth Day?  I'm lame and didn't do anything.  Well if you count re-using my Venti cup at Starbucks for a refill versus requesting a new cup, then I did participate! haha
I trained chest and triceps today with a round of cardio at the end.  For cardio I did jump rope.  1 minute on/1 minute off- for 10 rounds.  I was able to squeeze in the jump rope outdoors before it started to rain.  
We are supposed to get another round of thunderstorms tonight and tomorrow.  Um hello Mother Nature- I am deficient in vitamin D! Need some medicine asap!  The local news said it should clear by Sunday!! #sundayfunday

I'm struggling to finish this post tonight as I am so tired I can barely hold my eyes open.  Sorry friends, sometimes you just need more rest.

Eat More Rabbit Food!!


Hello Friends and Foodies!!!
Are you all being good and eating your daily recommended servings of vegetables??  Here is what the USDA recommends.  I take an every thing in moderation approach.  However when it comes to vegetables- especially green ones- I don't limit myself.  I also try to buy as much organic produce as I can afford.  I suggest reading this for guidelines regarding purchasing organic and non-GMO products.  One of my favorite vegetables is carrots.  Don't turn up your nose to carrots! What did they every do to you??? They're delicious- raw or cooked.  If I can persuade you to munch on them, buy organic.  I swear they're sweeter!!

Does anyone struggle with portion control?? I stumbled upon bags at Target when I was looking snack size bags.  These are perfect for both! As much as we both want to- don't fill it with chocolate chips! haha

It's Monday- which is leg day!  I started with a 1 mile warm-up run on the outdoor track at my gym.  The weather was just too nice to run indoors!  Got to get my dose of Vitamin D!  Once I warmed up, here is how the rest of my workout went:
  • Standing Leg Curls- 3 sets/12 reps
  • Leg Extension- 4 sets/15 reps
  • Bulgarian Split Squats- 4 sets/15 reps 
  • Dead lifts - same
  • Body Weight Lunges- 4 sets/20 reps
  • Leg Press-Single leg- 3 sets/15 reps
  • Cable thigh adductor- 3 sets/15 reps
  • Cable thigh abductor- 3 sets/15 reps
  • Glute Bridge with Bosu ball- 3 sets/15 reps
  • Calf Raises- didn't have time to do these! :-/

I was experiencing "dead legs" and hobbled my way into the bistro to grab a protein shake and then headed home.  I whipped up dinner(baked fish with kale and zucchini) followed by my treat of Arctic Zero Vanilla Maple Protein dessert topped with some PB2.  Delicious and healthy!! 

I guess that is all for tonight folks.  It's time for some good old American baseball!  GO ASTROS!!!

Oh Saturday!
Well when the alarm went off at 5:30am I strongly contemplated not getting up.  However the forecast indicated rain wouldn't be moving through our area until 10am.  So I got dressed and headed out the door to the Superhero 5k run in Missouri City.  Made a quick pit stop at Starbucks for a pre-run jolt of energy.  I got into a few sprinkles on my route and but nothing substantial.  I arrived and grabbed my race packet.  I saw LOTS of Batman, Captain America and Wonder Woman.  I didn't dress up because I had no desire to run in a rain soaked costume(should it have rained).  I really enjoy these small town races.  They have local personal trainers and small gyms lead the runners in a warm up.  It's nice and is essential for injury prevention.  It a nice route and not crowded.  However the last 1.25 miles were through a trail.  And I DO NOT like getting my good running shoes muddy. haha oh well.  I finished in the time I expected(29:31).  Grabbed my swag and headed home.

4th race of 2015 in the books! Only 8 more to complete my goal!!

When I got home, I showered and got ready to head back out to run errands.  I needed to go to the Apple Store(in the mall-shoot me).  Considereing that was the only store I needed to go to, I was frustrated to find out upon arrival that they only had enough power to run lights.  Apparently during the storms last night lightning struck a transformer and half the stores in the mall were without power.  Yet you wouldn't have know considering all the people there.  
So I left, grabbed lunch at Zoe's then headed to the grocery store.  When I got home I promptly took a much needed nap!  
Dinner time rolled around and I headed out to Salata.  One of my favorite spots.  I snagged these shots on the way.  Gosh I'm so blessed to live in such a beautiful place in Texas.

Sorry I don't have any recipes to share tonight.  However I found these organic beauties at The Fresh Market.  I've got BIG plans for them when they ripen! Stay tuned!!

TGIF!!!
I think that bears repeating- TGIF!!!!  It started off like any other typical Friday- me running late for work, and still stopping a Dunkin Donuts for an iced coffee.  Work was work.  I am thankful that I get off early on Fridays.  So promptly at 4, I packed up and headed home.
I got in a quick yoga session, courtesy of a Jillian Michaels Youtube video via Apple TV.
I wanted a easy afternoon since I am running the Missouri City Superhero 5k tomorrow morning.  Or hope to if these terrible thunderstorms die down.  I know it's only a 5k and all but I have to be up at 5:30am! I don't care who you are- that's early friends.  In my personal endeavor to run a race every month for a year, this will be my fourth race.  I try to pick a race that benefits a women's or children's charity.  This race benefits Stand Up 2 Cancer.  You can find more info here
Even though I wanted to be in bed early, I still made time to create a relatively healthy dinner.  I had some turkey taco meat in the fridge and some corn tortillas. BAM! Nachos!
I've perfected baking corn tortilla chips. It's super simple and just as tasty as the restaurant style chips.
As you can tell I didn't have time to take a picture of the nachos all dressed up.  I was far too hungry and shoveled them into my mouth.  Am I the only one who automatically defaults to Mexican food when you don't have a preset dinner plan???  Or is that a Texas thing?
Does anyone have a good whole wheat tortilla recipe? If so, send it my way. And the person who can show me how to make homemade tortillas.  That is one art I haven't tried to conquer yet.

It's time to wrap this up.  The weather has calmed down. I was looking for it to soothing me to sleep. Though I would probably lay awake wondering if a power surge would ruin my new tv and apple tv.

Woohoo it's Wednesday!

We've made it half way through the week! Today was busy and I didn't even work out today. I trained legs on Monday and chest and tricep's on Tuesday- so I definitely needed the recovery day.

I ordered business cards and a banner for the upcoming health expo a friend invited me to.  I'm nervous but excited about getting my name out there and showing off my cooking skills.

One of my close friends was generous enough to take some photographs for a project I'm working on.  Here are a few of my favorite shots:

Since we needed some "action" photos- I decided to make salmon cakes.  A staple in my home growing up.  My version is much healthier than the ones my mom made.  However, whenever my mom makes them- of course I can't pass them up.  

Slim Salmon Cakes
1- 4.5 oz can boneless skinless pink salmon, drained
2 tbsp Whole Wheat Bread Crumbs
2 tsp whole wheat flour
1 tbsp egg white
2 tbsp chopped green onions
1 tsp garlic powder
1 tsp dill
1 tsp Old Bay Seasoning(or your favorite seafood seasoning)
dash of parsley
Sea Salt 
Once fish is drained, pour it into a small bowl and flake it with a fork.  Then add the remaining ingredients and mix thoroughly.  Form mixture into 2 patties.  Spray a nonstick pan with cooking spray(I use coconut oil spray).  Heat to medium high heat and place patties in pan.  Cakes should be sizzling.  Cook for 4 minutes then flip and cook for another 4 minutes.  The trick is DO NOT MOVE THE CAKES ONCE YOU PLACE THEM IN THE PAN.  This will allow them to crisp and turn golden.  Then I finish the cakes in a 350 degree oven for 3-4 minutes.  Or you could broil them.  Serve with lemon and greek yogurt.  Or if you're me- a dollop of ketchup! 

This munchkin tried to steal the show tonight.  She loves attention and commanded my friend Carol to take her pic!  I think we can agree she is far more photogenic than I am!

My 3:00 cup of coffee included this treat!  Seriously you can set your watch to my 3:00 cup.  I'm addicted what can I say?! I truly enjoy the taste of coffee(I'm a high maintenance coffee drinker- no convenience store java for me).  Friends, if you haven't paired coffee and a quest bar- you're missing out.  What is your favorite flavor?!?!?! 

Well, Wednesday is winding down and I should probably get ready for bed.  It's thirsty Thursday tomorrow! You all know what that means . . . . nothing for this gal.  Sadly! haha

Happy Monday and Scenes from the weekend

Happy Monday all!  Everyone Monday I post a "Motivation Monday" picture/quote/inspiration on my Instagram.  Here is today's

I trained legs at the gym today.  I didn't get to work everything I wanted to but I was running behind, and quite frankly I was HONGRY!!! haha  I am excited to be running in the Missouri City Parks & Rec - Stand Up 2 Cancer Superhero Run on Saturday!  I am going run in a Catgirl costume.  Though I'm sure I will loose the mask half way through the race.  This will be 4th race of the year in my "year of races" goal.  One race per month.  Speaking of, I need to pick a race for May. Suggestions?!?!?!

Friday was a good day.  Short day at work and I was able to meet a friend and her daughter at Starbucks chai tea before I headed to the gym.  Here is a progress photo.  I rarely post pictures like this but I am so proud of the small changes I'm seeing.  We often don't celebrate the small things because we want bigger changes and at a faster rate.  But Rome was built in a day.  It takes time and consistency!

The weekend started with this
Whole Wheat Blueberry Pancake, scrambled eggs and bacon from one of my favorite breakfast spots- The Egg & I! So delish! TG for cheat days!  It is ok to indulge every now and again.  Everything in moderation!
Saturday evening, I met up with my friend Erin, from Erin's Sweet Boutique. We had salad, pizza and adult beverages while watching the Aziz Ansari MSG show.  It's hilarious, but not appropriate for children.

Sunday started off with church, then serving in PeeWee Ville.  Then I was off to my neice's surprise 7th birthday party~ at Chuck E. Cheese.  

Wow, no one warned me how loud that place is!  I should have brought ear plugs! However that delicious cake more than made up for the noise.  Don't judge- I had a very small piece.  
After the party I headed home for a bit, then to meet my small group for dinner and discussion.  Then I finished the night by watching Mad Men with a friend.  It's second half of the final season!! It's so interesting.  Even though I have a love/hate relationship with Don Draper but I'm sad that the series is ending.

Well I have an RMR test(resting metabolic rate) early in the morning, so I guess I better hit the sack.  Nighty night!

Hello All!
I hope everyone had a great day! I did.  I left work and went directly to my second house of worship- the gym.  I trained back and bi's. Followed by some burpees and mountain climbers. 1 minute, 1 minute off for 5 rounds each. Not easy folks!

It was such a beautiful day here in Southeast Texas!  Sometimes you just have to stop and enjoy the beautiful things in life!
I'm glad I had the time to lounge for a few minutes because it won't happen this weekend.  We're expecting rain all weekend and into next weekend.

Dinner looked like this-
Everything but the kitchen sink salad! Not pictured- homemade turkey burger and 1/2 ounce of pecans.  Tonight I needed a sweet treat and I caved and threw together this snack
If you haven't tried Arctic Zero yet you need to! Like go to the store right now and grab some. You will thank me.  Arctic Zero is an frozen treat made with whey protein.  It boasts amazing nutritional stats, only 35 calories, 7g carbs, 5g sugar, 3g protein for a 1/2c serving! The entire pint is only 150 calories, meaning you won't feel guilty if you eat the entire pint.(I only say that because I have-SMH).

I cannot scream that loud enough.  It's been a hectic week at work and I am looking forward to sleeping in on Saturday.  By sleeping in-I mean 8am! Gosh it sucks getting older.  
My niece's 7th birthday is this weekend.  What do I buy a 7 year old?? Suggestions please!

Hello Tuesday!
I feel like this week is flying by! Monday was a blur! It was Opening Day for National League Baseball, so of course I had to support my hometown boys!
Go 'Stros!!!
It was a win and a great way to start the season!
I had this delicious lunch- my own recipe- Sriracha chicken salad!!  
After work on Monday I trained legs as usual. I'm following a plan from BodyBuilding - this is a great source for weight training.  As well as diet/eating plans.

This morning I was feeling a bit tight from yesterday's workout, so I rolled out of bed and right onto the foam roller.  It is seriously the best $40 I ever spent!!  I followed my stretching with a protein pancake.  I was trying a new recipe and it was a FLOP!!! It tasted great but the consistency was off.  It was more like a cookie than pancake.
I even added some spray butter to dress it up.  It was stiff and dry.  I will attempt the recipe again this weekend.  

Well my pillow is calling my name.  Good night friends!!!

Happy Easter Weekend! 

All week I was looking forward to the three day weekend.  Sorry to those who weren't fortunate enough to have Good Friday off work.  I did make it a productive day by hitting the gym.  I started with a 1 mile sprint then worked my back.  I did 40 jumping pull-ups and wow did those kick my butt!!(or lats I should say haha) I was rocking new favorite tank from Greater Threads!




After my workout, I hit HEB for weekly groceries.  My church small group was having a picnic on Saturday morning so I had to grab a couple things for my dessert.  I made a family summer staple recipe- Lemonade icebox cake! Semi-tart cake with sweet vanilla frosting- taste bud heaven friends!! Thank goodness Saturday is cheat meal day- so I was able to splurge! I also scored big time with 97cent pints of strawberries! No they weren't organic- but for 97cents- I can wash them in veggie wash!
After shopping and cleaning up, it was time to meet one of my besties, Erin, for girl's only dinner.  We hit our local BJ's(we're obsessed with their GF Mediterranean pizza) then hit a local favorite wine bar.  We stayed out too late but we had fun.

I was able to sleep in until 8 on Saturday before getting up and putting myself together for the picnic. The weather was cool and breezy until the sun poked out.  It was a great time and good to be able to meet my group members(I am in a women's only group) and their families.  After the picnic, I met up with Erin and her family to go Bernie's.  Bernie's is a Houston favorite.  It started out as "Bernie's Burger Bus, but by popularity he opened a restaurant.  You can see my choice here.  OMG it was SOOOO good.  I had a chicken burger called "The Hall Pass" with truffle oil fries.  Epic meal for cheat day.  I took it to the next level by finishing the meal with a Fluffernutter milkshake.  Peanut butter and marshmallow shake.  Friends- this shake was straight from Heaven. I can officially say I ate so much, I feel as though I may not need to eat for 3 days.  Haha probably not ;-)

Tonight I plan to spend some time at home, do some meal prep because I'm going to be up early for sunrise service.  Then volunteering in PeeWee Ville at my church.  Sorry I don't have any special recipes to share today, though I could share the lemonade icebox cake if anyone wants it.

Hi!!!  haha
Let me introduce myself.  My name is Sherry.  I'm just a good ol' Southern girl who LOVES to workout and eat.  I am a self-proclaimed FIT FOODIE! Wait what?!? Is there such a thing? Who knows? I invented it! haha JK  I love to spend time training in the gym and playing in the kitchen.  I love to create simple, quick healthy recipes that anyone can recreate in their own kitchen. 


So I hope you follow me as I share clean, lean, mean recipes along with health and fitness tips, links, etc.


As an ingural post- I should share a recipe right?!? Here goes-
PROTEIN PUDDING!!!
Simple, quick and easy
1- container plain non-fat greek yogurt
1/2 scoop protein powder(I used Quest Vanilla Milkshake-whey/casein blend)*
2 tsp Unsweented Dark Cocoa Powder(could use regulat cocoa)
1 packet Stevia
Splash of chocolate or vanilla extract
Blend well and enjoy!
For a frozen treat- put it in the freezer for 10-15mins.
Get creative and use various flavors of protein.
*Using a whey/casein blend is what helped the consistency to be pudding like, though I've used whey blend in the past.
